The origins of this cheese are very ancient, perhaps of the tenth or eleventh century and the origin is the Val Taleggio in the province of Bergamo. The name is however recent and dates back only to the early twentieth century. The first written documents date back to 1200, when the cheesemakers of the homonymous valley felt the need to distinguish their fine cheeses from the production coming from other areas. Until then taleggio was commonly called “Stracchino”.<\/p>\n
