In these last summer flashes, cows usually feed the fresh grass born after the third cut, called quartirola grass. And it is precisely this last fresh herb, before the arrival of the icy winter, that characterizes the Quartirolo Lombardo fonnaggio, from which it takes not only the name: it is the aroma that this particular herb gives to the cheese that makes it so unique and characteristic.<\/p>\n
