Pecorino Toscano is called throughout Tuscany simply “cacio”. We began to talk about this cheese in Roman times. In 1400 it was called “cacio marzolino”, for the period of production that began in March and lasted for the entire spring. Historical sources declare that it was a very welcome food in banquets, so much so that it was tasted by famous people such as Lorenzo the Magnificent.
